Tua Tua and Prawn Fritters
MENU: TUA TUA AND PRAWN FRITTERS
200g Tua Tua meat, Chopped and Dried
200g prawn meat, chopped
1 tsp Baking powder
3 Tbls Milk
Red onion, chopped
1 chili, chopped
Wasabi Mayo (Mayo mixed with wasabi paste)
1 red apple
1 fennel bulb
Whisk the eggs into flour & baking powder; add the milk a little at a time to the desired consistency. Then fold in tua tua and prawn meat, and a selection of the above ingredients. Season with lemon juice & salt
Heat a non stick pan, lightly drizzle with oil and spoon the fritter mix in, around a generous table spoon size.
Cook for 1-2 minutes on each side or until golden brown. (Double check they are cooked in the centre. If not, finish them in a hot oven for 1-2 minutes).
Julienne the apple and finally shave the fennel and dress with olive oil
Serve fritters with a wasabi mayonnaise, some freshly cut lemon wedges and a apple salad
- Chefs Tip:
When you have chopped the Tua tua meat you should dry on a tea towel to absorb excess liquid. If you don’t this will make the fritter mix to runny. Remember when adding the milk to the batter, you can always add more but its hard to take away. So gradually add liquids.
