Pork Chops in Mushroom Marsala Sauce
1 Pork fillet
1 Onion, finely diced
2 garlic cloves, crushed
400g Button mushrooms, sliced
1 Tsp flour
150ml chicken or beef stock
50g sour cream
Salt and Pepper
Slice the pork fillet thinly.
Heat the oil in a frying pan and fry the mushrooms in batches until golden brown. Remove and set aside.
Then season the meat with salt and pepper and coat in flour.
Fry in oil on both sides until golden brown, then deglaze the pan with a splash of Marsala and remove from the pan.
Sauté the garlic and onions until soft in a little more oil then add the rest of the masala and reduce slightly then add the stock and reduce by half
Return the mushrooms and pork to the pan, cover and cook slowly over a low heat for about 3-5 minutes, or until done. Then finish with sour cream.
Serve with crusty bread.
