Chocolate, Nutella and Banana Crepes
1 cup flour
1 egg yolk
1 1/2 to 2 cups milk
1 Tsp melted butter
1/2 tsp vanilla extract
3 bananas, sliced
25g good-quality dark 70% chocolate, chopped
60ml double cream
100ml cream, whipped
Sift the flour with the salt into a bowl. Make a well in the center and add the egg and egg yolk. Pour in the milk, slowly, stirring constantly and, when half is added, stir in the melted butter and vanilla. Beat well until smooth. Add the remaining milk, cover and let stand at room temperature for at least 20 minutes before using. The batter should be the consistency of light cream.
Melt the butter in the cream (60ml) then stir in chocolate off the heat until smooth.
Heat a non stick pan add butter to grease then add a ladle of batter. Tip the pan from side to side until batter covers bottom. Cook until the bottom is golden brown, turn and remove to a plate. Repeat with remaining batter. Spread a thin layer of Nutella on the crepe then add slice bananas down the centre and roll up, repeat until you have a portion the spoon over chocolate sauce and whipped cream and dust with cinnamon.
