Chinese Prawn Omelette
150g prawn meat, tails, chopped
4 eggs, beaten
1 Tsp soy sauce
1⁄4 onion, sliced
1 green onion, sliced
1 red chilli
1⁄3 cup chicken broth
2 Tsp oyster sauce
3 Tsp peanut oil
1 tsp corn flour mixed with water
Toasted sesame seeds
Prepare sauce by adding oyster sauce to chicken broth then whisk.
Heat wok or skillet until extremely hot.
Add 1 some oil & stir fry prawns, chilli, onion & green onion until just cooked then remove.
Add the oyster sauce mixture to the wok then thicken with the corn flour and keep warm.
Add some oil to a non-stick frying pan & when hot, add the beaten eggs and soy.
Stir lightly until nearly set, the allow the base to set, then top with the prawn mix and sprinkle with sesame seeds and carefully roll up into a log.
Pour sauce over omelette and garnish with coriander.
