Broccoli and Goats Cheese Soup
1 head of broccoli, florets separated
2 carrots peeled & chopped
2 handfuls rocket
4 garlic cloves, peeled & smashed
½ onion, sliced
2 tsp roasted chicken bouillon
4 slices of thick cut bacon chopped & cooked till crispy
4 cups water
1 Tsp extra virgin olive oil
1 splash sherry vinegar
Crumbled goat cheese
Sour dough bread
Sauté the bacon until crispy then remove and drain on some paper.
Dice the sour dough, and fry until golden brown and crisp in the same pan as the bacon.
Mix the bouillon, garlic, onions and carrots with 1 litre of water and bring to the boil, cook until soft then add the broccoli until cooked, pour in a blender, add the rocket and 1/2 the goats cheese and blend until smooth. Season with some salt and sherry vinegar, Pour in bowls, garnish with some olive oil, goats cheese, crispy bacon and croutons.
