Chicken Cordon Bleu
2 Rangitikei free range chicken breasts
80g mozzarella cheese
2 slices, quality ham
30g plain flour
1 egg, whipped
70g panko crumbs
large Knob butter
100g green beans
15g flaked almonds
Cut the chicken through the side about half way and open up.
Gently flatten with a meat mallet or back of a pan, place a piece of ham in the centre and some cheese on top, fold over the chicken and press down firmly.
Flour the chicken parcels then roll through eggs and then panko crumbs.
Melt the butter in a frying pan, then when foaming add the chicken, cook for 4-5 minutes over a medium heat or until coloured then flap and repeat process.
Cook the beans in boiling salted water the beans until softened add to the pan with the almonds and toss for 1 minute.
Serve chicken with the beans and almond on the side.
